My mom is now trying a gluten free diet. After years of undiagnosed stomach and digestive issues she is taking a cue from Dr. Oz and cutting gluten out, to see if this will improves her health. Dr. Oz is like an angel in a lab coat, even though he doesn't wear one on t.v.. I say this because he has brought to the public's attention a major health issue, which is celiac/gluten intolerance. I personally know many people who experienced life changing benefits once they cut gluten from their diets.

Zebra Organics and it's founders Randy Olsen and Mark D'Aquila have been exploring the world of healthy eating, raw food and local food for the past 15 years. Oh honey . . . how much do we love you . . .? Let me count the ways:

Magical Food
Honey is such a special food source and I (Mark D'Aquila) the guy who writes these blogs love it so much. To me honey is magic, what the bees do is alchemy, drinking nectar from a flower then transforming it into a sweet viscous nourishing substance. Honey and bees have been revered throughout time, archaeologists found honey in a pyramid in Egypt and guess what, it is still good, honey never spoils. Enzymes
Honey is a high enzyme food, some of the enzymes in honey have been introduced by bees and some are part of the original flower nectar. Vitamin D for the Winter

Vitamin D is a fat soluble vitamin most known for its role in maintaining proper bone health and density. It is a necessary nutrient produced in the body through the skin's exposure to the sun. General daily sun exposure is usually enough to maintain healthy levels of this vitamin. In winter when the sun is not in the sky as much and we are not outside as much using vitamin D supplements may be an option.

Why is Vitamin D so important?

Because it has a positive affect on:

Heart Health
Immune system function
Bone Health
Calcium uptake
Integumentary System
Mood

Over the past few years researchers have discovered Vitamin D has a wide range of health benefits, some of which are listed above. Its role of maintaining a healthy immune system is what I want to talk address now as we are headed into the winter. Commonly during winter there is a rise in colds and the flu, which makes it a good time to do what we can to stay healthy. Knowing that Vitamin D can play a role is promising because we need it anyway for general health. So making sure we get enough of it now may help us stave off the common cold or something more serious.

Recent Study*

A study in Japan on vitamin D3 and bone density found that subjects taking the supplement were three times less likely to report cold and flu symptoms. These unintended findings led to more research. Further research was conducted and the findings indicated that subjects using a 1,200 of D3 were 58% less likely to catch influenza A. The study included 334 subjects half received a placebo and half received Vitamin D3 1,200 units a day. Out of these two groups 31 people in the placebo group caught influenza A and out of the group who supplemented with D3, 18 subjects caught influenza A.

Safety and Food Sources
Vitamin D is relatively safe, toxicity beginning to occour at around 50,000 IU's a day.
Food sources of Vitamin D include fatty fish:

mackerel
sardines
salmon
anchovies

Many foods are also enriched with Vitamin D including milk and orange juice; egg yolks are also a good source of Vitamin D. If you look to eggs for this nutrient and other nutrients it is best to source eggs from local chickens who have time in the yard to feed on insects and who receive healthy feed.

The Linus Pauling Institute at the University of Oregon is a great source for scientifically detailed information on Vitamin D and its benefits.

I feel we have been gravely mis lead by the low fat craze and I would like to illustrate why saturated fat is important and some of the functions of cholesterol.

Essential to Health

Saturated fats and coconut oil are not only important components of a healthy diet they are essential to human health. Consider the facts on saturated fats:

Vital carriers of the fat soluble vitamins A, D, E and K
Required for the conversion of Vitamin A to carotene
Contains the antiviral compound caprylic acid
Contains the antifungal compound lauric acid
Contains the anti cancer compound butyric acid
May actually lower cholesterol levels

Cholesterol and Health

The case against cholesterol and saturated fats is based in both the politics of health and an incomplete understanding of health. In America there is a reductionist view of nutrition. Nutrition and human health are highly nuanced and intricate and to make the case that cholesterol is bad and saturated fats are bad is over simplified. While high cholesterol can be dangerous, cholesterol is completely needed for health. Butter oil capsules (pictured to the left) is a high quality saturated fat containing Vitamins K, E and CoQ enzymes.

Cholesterol is needed to produce the following hormones
-insulin

Who could not use more relaxation in their life? Relaxation, that space between things, that space we do not rush to fill, that space we savor and is seemingly in short supply. Relaxation is both something we do and a way we are; as one can be relaxed in the midst of activity. Relaxation is a state of mind that also has bio chemical components.

We will focus on the more tangible physical aspects to relaxation and how a certain tea can help us into a relaxed state of mind. We will focuse on Matcha, a powdered form of Japanese green tea.

Matcha

Ritual
The popularity of matcha has sky rocketed in recent years and for good reason, it is highly nutritious, versitile, tasty and rich with ritual meaning. Seaweed for Health

At Zebra Organics we stock a variety of healthy foods and a favorite of ours is seaweed. These vegetables of the sea contain a wide range of nutrients not found as easily in land vegetables. The are fun to eat and add variety and nutrition to the diet.

Nori

Seaweed is a common food in Japanese cuisine, one the most popular varieties being Nori. One of the great benefits to consuming nori is that it contains an abundance of omega 3 fatty acids. Omega 3 fats nourish the skin as well as the brain and modulate cholesterol levels and inflammatory compounds the body produces. And, it is high in vitamin C, proteins and mineral salts.

Kombu/Kelp

It seems "Black Friday" has been elevated to holiday status and that this shopping day has taken on an almost religious quality. It is not uncommon to encounter heavy metals and radiation in our daily life. Our body is an amazing organism that is keen on maintaining balance under all circumstances, including in the presence of heavy metals and radiation.

Our bodies produce some of the most potent anti-oxidants in world. These compounds work to negate and support the cleansing of toxins, pollutants and free radicals. Our very dear friend Chef Jacob Hopkins has been delighting taste buds for years.

We'll be in Sedona, Arizona this next weekend for the Raw Spirit Festival -- September 12 - 14th

We'll be spending time with Gabriel Cousins from the Tree of Life, Chef Jake Hopkins maker of the Goji Bar, and Cipes of Cipes and the People... the band with the theme "Conscious Revolution."

It should be an exciting weekend and we're looking forward to meeting the numerous vendors and friends that will gather in this magical desert setting for the largest raw vegan, ecopeace celebration. September 12th - 14th we all unite at this beautiful resort, located amidst trees and ponds on luscious lawns beneath Sedona, Arizona's famous Red Rock Mountains.

Organic Intro Matcha

Our organic matcha is from an 800 year old tencha tea plantation in Japan. These ancient plants produce high quality green tea and are specially tended to ensure the end product is sweet, bright green and fresh. Once the leaves are harvested they are hand inspected and sent to a modern facility for processing. Granite grinding wheels slowly grind the tea to a fine emerald green powder. Grinding temperature never reach above 70 degrees F, making it suitable for those on a raw food diet.

Matcha is superior source of vitamins, minerals, amino acids and other healthy compounds. It contains 10-15 times more nutrients than regular brewed tea. Matcha promotes calm clear energy due to the presence of the amino acid theanine. Theanine is unique to all varieties of tea and matcha contains a high percentage of this compound being that it is in a whole leaf in a fine powder form. Theanine supports alpha brain wave function. Wow! I got'a say, this past weekend's Eco Gift Expo was everything it promised to be. There was a general feeling of authenticity and unity at the expo. The diverse range of people who came together in Santa Monica, a few days ago, seemed to be there because they genuinely want to raise their eco-consciousness. We met person after person who was beaming with an inspiring story to tell, a great product to offer, and/or a moving idea to share.
